SILVER BULLETS BY LAND AND BY SEA

Two things I love so much are refereed to by the same name. The "Silver Bullets" are definitely my favorite Air Max of all time paired with one of my favorite fish, the Mediterranean Sea Bass, also a Silver Bullet.

The colors are supreme, the design is still innovative 20 years later and the fit is incredible!

The sea bass is unique with its white belly, speckled silver scales and "Silver Bullet" speed

There are so many applications to prepare sea bass. I chose to salt bake. The salt correlating with the sole of the Air Max was inspiring, along with the unbelievable moisture and flavor due to the high temp and short cook time. This preparation is great with hot chili oil. It provides heat, flavor and in this case accents the red Nike check! Enjoy!! #ShoeYourFood

A neighbor of mine said we should do a post related to Breast Cancer Awareness back in October. Life gets in the way and the shoot never happened. It's National Cancer Prevention Month and recently the birthday passed of a friend who died last year to breast cancer. I thought to myself that we should acknowledge awareness year-round. After seeing this shoe, I immediately thought French Macarons - the air max bubble are a no-brainer! This is a dedication to my childhood friend Aliyah, and to encourage all women to receive examinations to catch this in advance and be treated.

CLAMS + BALANCES

I remember the first time I ever had clams; steamers if you're from New England. I was in Daytona Beach, Florida, where I learned about mowing lawns and digging for clams (clamming), just a couple of jobs I had along the way. I learned about clams, and all types of seafood, where it came from, how it develops and it's definitely benefited me as a Chef. Back to my first time...simply hell. I wasn't too familiar with habaneros just yet; tabasco was my go-to for eating clams. One day while having a few beverages with friends on a boat, we docked at a bar where we enjoyed a few buckets of clams and oysters. They happen to have a bottle of crushed habaneros that was being passed off as a house-made tabasco sauce (damn Floridians). I always like to sauce the clams in advance so I can just enjoy. After 3 clams and two chugs of Corona, my face started to feel like it was going to split in half. It wasn't pretty. No matter what, always ask for the ingredients. The good thing is nowadays, I still love clams, and habaneros aren't too bad.

The first pair of sneakers I bought with my own money were Saucony Jazz; white, purple and orange. The money came from one of my first jobs during the summer between 7th and 8th grade. I had always made a grave effort, but my fashion game was really coming together at this point, or at least that's what I thought. I had an orange Cross Colour button-up, purple Cross Colour pants and a white t-shirt that made the outfit. Ensuring that your outfit had every color that was in your shoes was widely important, and still is for many. I savored that ensemble! Not knowing the status of when I would be able to buy a new pair of sneakers, I always made sure I kept them clean...toothbrush with my special concoction that I probably could have bottled and made millions.
Being fresh is one thing, staying fresh is what's important!

ALWAYS BUTTER OVER MARGARINE

Oh how things change, but some things stay the same. I still love a pair of 6" Wheat Timberlands with the double gum sole. In the nineties we called these "butters", and still to this day I can be heard referring to them as just that. No matter how many pairs of Jordan's or Air Forces Ones I buy, nothing can compare to buying a new pair of "butters" in the fall before the snow hits. I recall in my day going to the shopping outlets in Pennsylvania, either Reading or Lancaster and buying 2-3 pair of "butters" at once. You can never go wrong with having a fresh pair stashed away.

Always butter over margarine!

BACK TO MY ROOTS

Growing up bi-racial there were many challenges as well as many perks in my family. The one I enjoyed the most was the diversity of the kitchen.

I recall the first time I dropped into my Italian grandmother making homemade sauce – roasting the tomatoes, peeling the tomatoes, then into the pot to cook for hours. Onions, garlic, fresh herbs and sausage renderings amongst her core ingredients. I was hooked.

Her sauce is one of the strongest flavors of my life – and transports my mind to many Sunday, holiday and special occasion dinners. I can hear my grandmother saying, "Pazienza", when I was anxious to taste the sauce – the recipe for which has been passed down from generation to generation, first to my mom, then to me.

Of course, everyone adds a little to make it their own, but the results are the same – the aroma, the comfort, the feeling of home. At first site, these Air Force 1s brought me memories of many dinners with that wonderful pasta sauce over homemade angel hair, parsley steamed mussels and garlic bread.

As your mouth waters, enjoy the pairing. Thanks, Gram!
